I am unashamedly pedantic when it comes to CVs. I place a lot of emphasis on how my CV looks. Obviously the content has to be there, that goes without saying, but I think the visual impact also speaks volumes. A well organised CV will definitely help getting through that initial sift.
I would recommend Typography for Lawyers by Matthew Butterick for a short and easy-to-read explanation of some fundamental principles. Also, on his website he provides a really good example of a well formatted CV.
